Caesar-Style Potato Salad

Caesar-Style Potato Salad is an easy and delicious recipe for a different potato salad side dish. INGREDIENTS:
1 lb new red potatoes, quartered, cooked and cooled
2 celery ribs, thinly sliced
3 green onions, thinly sliced
1/4 cup real bacon bits
1/4 cup Caesar salad dressing
1/4 cup plain nonfat Greek-style yogurt



DIRECTIONS:
1. Combine all ingredients together.

2. Refrigerate several hours or until chilled.

Chicken Burritos Plus+ 3 Per Serving

Ingredients:

1/2 cup fine chopped Roma tomatoes
1/2 cup fine chopped, peeled mango
1/4 cup red onion, chopped fine
4 tbsp lime juice
3 tbsp cilantro, snipped
2 to 3 tsp jalapeno peppers, seeded and
finely chopped
(12 oz) boneless, skinless chicken breast halves
1/2 cup water
1/4 tsp salt
1/4 tsp cayenne pepper
8 (6 inch) corn tortillas
1 1/2 cups shredded leaf lettuce
1/4 cup light sour cream

Directions:



1. In a medium bowl combine the tomato, mango, red onion, 2 tbsp of the lime juice, cilantro and jalapeno. Cover and chill for 30 minutes.

2. Place chicken and the water in a large heavy skillet. Bring to a boil; reduce heat. Simmer covered for 12 to 14 minutes or until chicken is tender and no longer pink. Drain well; let cool until easy to handle. Using two forks, shred chicken and toss with the remaining lime juice, salt, and cayenne pepper.

3. Meanwhile, wrap the tortillas in foil and bake in a 350 F. oven 10 minutes or
until warm.

4. To serve: Spoon shredded chicken down the centers of warm tortillas.
Top each with salsa, leaf lettuce and sour cream and roll up.

Rocky Road Parfaits Plus+ 4 Per Serving

Ingredients:

1 4-serving-size package fat-free,
chocolate instant pudding mix
2 cups fat-free milk
1/2 cup frozen light whipped dessert topping, thawed
1/4 cup unsalted peanuts, coarsely chopped
1/4 cup tiny marshmallows

Directions:



1. Prepare pudding mix according to package directions using the fat-free milk. Remove 3/4 cup of the pudding and place in a small bowl; fold in whipped topping until combined.

2. Divide remaining plain chocolate pudding among four 6-ounce glasses or dessert dishes. Top with dessert topping mixture. Let stand for 5 to 10 minutes or until set.

3. Sprinkle with peanuts and marshmallows just before serving.

1/2 cup plain dry bread crumbs
1 small onion, finely chopped

1/2 cup cholesterol-free egg product
1/2 cup bottled barbecue sauce
1/4 cup ketchup

DIRECTIONS:

1. Preheat oven to 350° F.

2. Microwave crumbles in a medium size microwaveable bowl on HIGH 1-1/2 minutes Add all remaining ingredients except ketchup; mix lightly. Let stand 5 minutes.

3. Shape into loaf in a 9 inch pie plate; top with ketchup.

4. Bake 35 minutes or until center is done (160º F.).

WW Fudge-Marble Brownies WW Plus+ = 4



Ingredients:

Cooking spray
1 ( 8 oz) bar Neufchatel cheese, softened
1/3 cup sugar
2 egg whites
1 tsp vanilla extract
1 box (18 oz) fudge brownie mix
1/4 cup canola oil
1/4 cup water
4 egg whites
1 tsp vanilla extract
1/4 cup semi-sweet mini chocolate chips

Directions:

1. Preheat oven to 350° F. Spray bottom only of 13 by 9 inch pan with cooking spray.
In a medium size bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in sugar, the 2 egg whites and 1 tsp vanilla until well blended.

2. In a large bowl, stir brownie mix, oil, water, 4 egg whites and 1 tsp vanilla with spoon until well blended. Spread into pan.

3. Spoon cream cheese mixture over brownie batter in pan. Cut through cheese mixture and batter with knife several times for marbled design. Sprinkle with chocolate chips.

4. Bake 28 to 32 minutes or until toothpick inserted in brownie 2 inches from side of pan comes out clean or almost clean. Cool completely, about 1 hour.

5. Cut into 6 by 4 rows. Store covered in refrigerator.

Yield: 24 Brownies

Ingredients:

1-3/4 cups flour
3/4 tsp. baking soda
1/4 tsp. salt
1 pkg. (4 oz.) semi-sweet chocolate, divided
3/4 cup (1-1/2 sticks) margarine, softened
1/2 cup packed brown sugar
1/2 cup granular no-calorie sweetener
1 egg
1 tsp. vanilla
1 Tbsp. thawed sugar free whipped topping
1 tsp. warm water

Directions:

Heat oven to 375°F.

Mix flour, baking soda and salt. Chop 2 oz. chocolate.

Beat margarine, brown sugar and granulated sweetener in large bowl with mixer until light and fluffy. Blend in egg and vanilla. Gradually beat in flour mixture. Stir in chopped chocolate. Drop heaping tablespoonfuls of dough, 2 inches apart, onto baking sheets.

Bake 11 to 12 min. or until lightly browned. Cool on baking sheets 1 min.; remove to wire racks. Cool completely.

Melt remaining chocolate as directed on package. Stir in COOL WHIP and water. Dip half of each cookie in chocolate; let stand until firm.

Makes 36 Cookies

Deep Dish Pizza Casserole Plus+ 7 Per Serving

Ingredients:

1 lb ground round
1 (15 ounce) can chunky Italian-style tomatoes
cooking spray (Pam)
1 (10 ounce) can refrigerated pizza dough
6 ounces shredded part-skim mozzarella cheese

Directions:



1. Preheat oven to 425°.
2. Cook meat in a nonstick skillet over medium-high heat until browned, stirring until it crumbles. Drain, if necessary, and return to skillet. Add tomatoes, and cook until heated through.
3. While meat cooks, coat a 13 x 9 inch baking dish with cooking spray. Unroll pizza crust dough, and press into bottom and halfway up sides of the baking dish. Top the pizza crust with meat mixture.
4. Bake, uncovered, at 425° for 12 minutes. Top with cheese, and bake 5 minutes or until crust is browned and cheese melts. Cool 5 minutes before serving.
